homemade Ladyfinger Cheesecake Recipe |

I constantly try to come up with "cheater" recipes that are delicious and make people think I am a genius in the kitchen. This one worked! It's fantastic. Ingredients - 2 packages No-bake Cheesecake Mix (I think they were 11.1 oz.)
- 2/3 cup Butter, melted
- 1/4 cup Sugar
- 1 package Ladyfinger cookies (25 cookies)
- 1 8-ounce package Cream Cheese, softened
- 3 cups Cold Milk, divided
- 1 carton (12 ounces) Frozen Whipped Topping, thawed
- 1 can (21 ounces) raspberry, cherry or strawberry Pie Filling
Directions
1. In a bowl, combine contents of crust mix packages, butter and sugar. 2. Press mixture onto the bottom of an ungreased 10-inch springform pan. 3. Arrange ladyfingers around the edge of the pan. 4. In a mixing bowl, beat cream cheese and 1/2 cup milk until smooth. 5. Gradually beat in remaining milk. 6. Add contents of filling mix packages. 7. Beat until smooth. 8. Beat on medium for 3 minutes. 9. Fold in whipped topping. 10. Pour over crust. 11. Cover and refrigerate for at least one hour. 12. Top with pie filling. 13. Remove sides of pan before serving. |
