Homemade Cherry Vanilla Cheesecake Recipe |

This is a cheesecake that I just made for my husband's surprise birthday party. I have made many traditional cheesecake recipes but this one was the first with a fruit topping which appealed to the British palate. Ingredients 10 inch springform pan Crust: - 1 1/2 cups graham cracker or digestive biscuits crumbs
- 6 tablespoons butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Filling: - 3 pounds cream cheese
- 6 eggs
- 1 3/4 cup sugar
- 1 tablespoon vanilla
Topping: 2 cans of cherry pie filling Directions
1. Mix the crumbs with the melted butter, sugar and cinnamon. 2. Grease the bottom and partly up the sides of a 10 inch springform pan. 3. Press the graham cracker or digestive biscuit crumbs smoothly across the bottom and partly up the sides of the pan. 4. Bake the crust at 350 degrees for 10 minutes. 5. Cool the crust before filling. 6. Use a mixer to mix the cream cheese with the 6 eggs, sugar, and vanilla. 7. Eggs should be mixed in one at a time to ensure a smooth mixture. 8. Pour into the prepared crust. 9. Bake one hour at 375 degrees. 10. Let it set in the oven to cool down for 1 hour more after it is done baking. 11. Spoon the canned cherry pie filling onto the top of the baked cheesecake. 12. Chill for at least 2 hours. |
